Agave syrup (also known as agave syrup) is a sweetener produced in Mexico from various types of agave. Agave syrup is sweeter than honey, but less viscous. It is produced in the Mexican states of Jalisco, Michoacán, Guanajuato and Tamaulipas.
Agave syrup is often used as a substitute for sugar or honey in recipes. Vegans in particular use agave syrup as a substitute for honey. It is also used to sweeten cold drinks/cocktails as it dissolves quickly.
Agave syrup is sold in clear, amber, dark, and raw varieties. The clear agave syrup has a nearly neutral taste and is therefore sometimes used in more mildly seasoned dishes. The amber syrup has a moderately strong caramel flavor and is used in foods and beverages with a more pronounced taste. The dark syrup has a strong caramel note and gives dishes a distinctive flavor of its own. The dark version is unfiltered and therefore contains a higher concentration of agave minerals. The darker varieties are often used for sweetening and garnishing, for example on pancakes or waffles. Raw agave syrup has a neutral, mild flavor. It is produced at temperatures below 48°C (118°F) to preserve the natural enzymes, which makes this variety considered suitable for raw food diets.
